Now when it comes to pairing wine with food, the possibilities are endless; but understanding the types of wines and how they’re made can elevate every meal. At Corked & Lit, we’re all about bringing flavor, story, and culture together, one pour at a time. In our first YouTube episode, “The First Pour,” we explored that flavorful intersection by pairing Peaks & Tides 2022 Cabernet Sauvignon from Sonoma County with a plate of bold, mom’s comforting nachos. That Cabernet, aged with oak to develop its rich body and notes of dark fruit and vanilla, brought depth and structure that enhanced every bite.
We also revisited pairing magic in our “Perfect Wine Pairing” video reel, where we grilled up seasoned chicken legs and thighs, fried Brussels sprouts, and roasted fingerling potatoes and asparagus. The star of that table was a Ménage à Trois Red Blend (a mix of Zinfandel, Merlot, and Cabernet Sauvignon). This blend balanced smoothness with boldness, combining fruit, spice, and subtle oak notes to beautifully complement the smokiness and garlic forward flavors of the meal.
As we explore the world of wine, we’re diving into the bold complexity of Bodacious Reds like Cabernet Sauvignon, Merlot, Malbec, Pinot Noir, and Syrah. These wines are normally aged in oak barrels, introducing spice, vanilla, and smoky notes that bring out the best in hearty dishes (think grilled jerk chicken, steak, tacos, and dry-aged T-bones).
Rosy Rosés which are fermented shortly with red grape skins and sometimes aged in stainless steel, offers refreshing notes of melon, citrus, and berries. They shine with lighter appetizers and hors d’oeuvres like shrimp, caprese, or even charcuterie (that fancy cheese board or grazing table the fruit, crackers and sausages). And of course, the Witty Whites including everything from the buttery richness of oak aged Chardonnay (perfect for Tamago Gani by the way) to the crisp taste of Sauvignon Blanc (ideal with roasted chicken or lemony piccata), and the sharp, citrusy vibe of Pinot Grigio ( heavenly match made for salads). Even sparkling wines like Champagne and Prosecco bring their own spark to the table!Champagne with creamy cheeses or fried chicken, and Prosecco with sushi or spicy appetizers could make its way to The Munchie Table on Corked & Lit.
